You must achieve a satisfactory outcome for each of the required criteria of this assessment to
be deemed satisfactory for this assessment. You must achieve a satisfactory result for the
assessments for this unit of competency to achieve a competent result for the unit. If one or more
of the assessment results are not satisfactory, you will be
Not Yet Competent for this unit.

The student handbook has the steps for reassessment if you receive a
Not Yet Competent mark and
do not want to appeal.
Reasonable adjustment for assessment
Where students have highlighted Language, Literacy and Numeracy issues reasonable adjustment to
the assessment can be made. Should you receive a ‘Not Yet Competent’ or ‘Resubmit’ result for the
assessment you will be given the opportunity to re-submit your assessment work with any
amendments requested by your trainer.
The adjustment may include actions such as:
• Student demonstrating knowledge through verbal discussion to identify correct answers
• Student demonstrating knowledge through applied skills
• Allowing additional time relating to disability
• Through consultation amending assessment timeframes
• Assistance in the form of the training location to allow easier access
• Accessing relevant equipment or aids to assist the student
• Adjustments to the assessment methods to cater for any special needs (without effecting the
integrity of the outcome)
If a student requests or is identified as requiring reasonable adjustment to the training and
assessment process a detailed training and assessment plan including timetables, notes regarding
the required adjustments, and any related communications regarding the adjustments must be
maintained in the students file.
The RTO Manager must review and authorise any request for ‘reasonable adjustment’ to ensure that
any adjustments and resulting outcomes are not affecting the integrity of the training and assessment
process.
Location of and completion timeframes for assessment
The location of the assessment will depend upon the nature of the assessment. Direct observation of
student’s skills will be assessed in the practical commercial kitchens/simulated restaurant at
Academia, the timeframes for these assessments will be related to the scheduled times of the
practical classes. Other assessments such as; role plays, in class activities, presentations and written
tests will be conducting in the classroom. The timeframes and due dates for these assessments, as
well as any reports, projects or research assignments, are documented in the stage outlines. Stage
outlines are handed out at the beginning of each term.

Develop operational plan
The Phillip Island Resort owner has decided to upgrade its Medium sized hotel in Phillip
Island Victoria. The owner wishes to become more environmentally friendly by replacing
old inefficient equipment ( air conditioners and lighting ) with more efficient ones in its
guest rooms. They also want to renovate their swimming pool area as the fencing is in
poor condition and there has been legislation changes that make it a liability. The pool
needs to be emptied and resurfaced that will take 3 months and will be unusable during
this time. The pool fence needs to be replaced. The owner feels that this will be a good
opportunity for the restaurant to be rebranded so it can specialize in local produce, this will
require a new menu, new logos, and some new suppliers .
The current middle management Head chef , Restaurant manager , and Front of house
manager along with yourself the general manager will oversee the project and each
manager will have a separate area to control
The hotel is very busy over the summer and early autumn seasons with the shoulder
season beinglate autumn and early spring. Winter is the low season and a good
opportunity to perform the renovations. How much planning time is needed ,how long will
the project take? what is the contingency plan and how can you ensure the upgrades are
progressing as expected?
As the manager you are to plan for this project, choose some equipment, acquire
human resources, and monitor project against set KPI’s so it goes as planned,
ensuring legal compliance during this time.

advantages and possible problems that may be encountered. Highlight s legal
obligations as well as a contingency plan for time and budget overruns
2. Delegate roles and responsibilities to your management team , ensure you have
an induction process to clearly outline each managers role, according to your
companies induction policy
3. Resource requirements . The hotel has between 20- 30 double guest rooms
(you choose) provide purchasing information for newsplit system air conditioners
and lights. The old air conditioners are 2-star 3kw units and thelights at 18 w
fluorescent tubes, 4 in each room. What is the cost of these new appliances.
Create a purchase order for these on your business’s letterhead
4. The swimming pool fences need to be replaced, research legal options that are
required for pool fencing in your state contractorsto install fence and resurface the
swimming pool.
5. Source 3 new local suppliers, create new theme and logo for the restaurant
6. Department heads will manage the project, Head chef , Restaurant manager and
Front of house manager with you being the project manager. Give each department
head a portfolio to manage and clearly outline their responsibilities in the project
along with their KPIs. Ensure you can rate their performance against their KPIs as

you monitor the project. Show how communication will be maintained throughout
the project
7. Create an interactive Gannt chart that clearly shows departmental roles and
allocates tasks toother staff and contractors as required. Each department must
have 4-5 tasks that it is undertaking, each of these tasks will need to have multiple
components i.e planning, implementation, and conclusion
8. Tasks must be monitored and rated as the progress against quality, time, and
budget. Ensure some tasks experienced problems and record these.Reports must
